CCA cooks - Un poquito de México!

A beautiful mix of flavors, colors, smells, and people = FIESTA! Un Poquito de México was just what we had on a lovely warm evening at the beautiful home of our host, Linda.

Our menu was inspired but not limited to Mexican tastes. We began with Strawberry Gazpacho (thanks to Blue-Kitchen.com) and Agua Fresca. Next we made Real Margaritas courtesy of Ina Garten's Barefoot Contessa Parties book.

On to homemade white corn tortillas, many salsas, guacamole, refried beans, and tortilla soup. The unique Mango Salsa allowed for a helpful mango cutting demonstration—a few easy steps leads to more mango in the dish and less left on the pit! We also shared a few new avocado cutting techniques which makes removing it from the shell a snap.

We chatted, relaxed, did some cooking demonstrations, cooked together, played together, and cleaned up together. Pasamos una noche muy linda! (It was a beautiful evening!)

Looks and sounds like a wonderful evening! I can only imagine that the smells equalled the cacophony of colors. Absolutely beautiful photos!
